Ingredients
  1. 2lb uncooked deveined shelled LARGE shrimp, thawed if frozen, tail shells removed
  2. 1/2 teaspoon salt (I took off salt)
  3. 1/4 teaspoon pepper
  4. 1 cup matchstick-cut carrots
  5. 1/2 cup cut up thin onions
  6. 1 can string beans (good way for kids to eat veggies)
  7. 1 medium sweet red pepper, cut into 1-inch pieces
  8. 1 can (2 oz) pineapple chunks, drained
  9. 2/3 cup sweet-and-sour sauce
  10. 1 dash of soy sauce (thats why i dont use salt)
Instructions
  1. Cook shrimp on low heat until pink.
  2. I stir fry (in) all other ingredients on medium heat until done, you do not want to over cook.
  3. Mix it all together.
  4. Let sit 1-2 minutes then serve - you can serve over noodles or with rice.
