Ingredients
  1. 1 pound beef round steak, cubed
  2. 2 teaspoons olive oil
  3. 2 medium red onions, finely chopped
  4. 1 cup diced celery
  5. 2 cups diced ripe tomatoes
  6. 1 cup diced sweet potato
  7. ½ cup diced red pepper
  8. ½ cup diced yellow pepper
  9. 1 cup diced carrot
  10. 4 cloves of garlic, chopped
  11. 1 tbsp red wine vinegar
  12. 3 cups homemade beef stock or water
  13. 2 bay leaves
  14. 1 teaspoon minced fresh thyme
  15. 1 tablespoon minced fresh parsley
  16. salt and black pepper, to taste
Instructions
  1. In a large pan heat 2 tbsp olive oil over medium heat. Add the onion and garlic and saute for 2 minutes. Add beef cubes and cook until browned, about 3-4 minutes.
  2. In a 6-qt slow cooker or French oven, combine meat and onion mixture, tomatoes, sweet potatoes, carrot, peppers, celery, bay leaves and stock. Cover with lid and cook on low heat for 4 hours. Then uncover, stir in fresh herbs, season with salt and black pepper and serve.
