Miz Jackie’s LAZYDAY (Beef and Biscuit Casserole)

During the summer months we spend a lot of time at the beach, pool and doing fun family stuff. And after that who has time to cook all day on some days, So every cook should have a LAZYDAY OFF! I love  hearty healthy good fast casseroles and this one doesn’t disappoint! Perfect to feed your hungry family on a busy weeknight or when press on time .Toss a Salad and heat up some Rolls ,with Sweet Tea dinner is ready.

Ingredients
  1. 2 lbs lean ground beef
  2. 1 (1 oz) packet taco seasoning (or 2 tablespoons homemade taco seasoning)
  3. ¾ cup water
  4. ½ cup sour cream
  5. ½ cup light mayonnaise
  6. 1 cup cheddar cheese, shredded
  7. 1 onion, diced
  8. 2 cups biscuit mix (I used Bisquick)
  9. 1 cup water
  10. 2 Roma tomatoes, diced
  11. 1 green bell pepper, diced
  12. 1 (4 oz) can green chilis
Instructions
  1. Preheat oven to 325 degrees. Spray a 9x13" baking dish with non-stick cooking spray. Brown ground beef until no longer pink, then add taco seasoning and ¾ cup water and let simmer for 3-4 minutes.
  2. In a medium bowl, mix sour cream, Mayo, half of the cheese, and half of the onion together and set aside.
  3. In another bowl, mix together biscuit mix and water to make a soft dough. Press dough into the bottom and ½" up the sides of greased 9x13" pan.
  4. Saute remaining onions and green peppers until barely tender.
  5. On top of the biscuit, layer the remaining ingredients in this order: ground beef, diced tomatoes, green peppers and onions, green chilis, sour cream mixture, and remaining cheddar cheese.
  6. Bake for 30-35 minutes or until edges are slightly browned.
